Our sushi rice is made using Itoshima rice grain cooked with black vinegar from Kagoshima and red sake from Kumamoto, topped with fresh fish from the Genkai Sea delivered from the market each morning. Savor the taste of freshly made sushi, prepared by our chefs right in front of you.
Hot steamed sushi made with the the fresh catch of the day, such as sea bream or amberjack, with your choice of toppings, including locally caught boiled whitebait or flying fish roe. We also serve local Fukuoka cuisine every day, such as gomazakana: fish mixed with sesame sauce.
Using rice grown in the fertile ground and clear streams of Itoshima, Fukuoka Prefecture, we steam our polished white rice to fluffy perfection.

Hakata Okyuto
Okyuto is a traditional, processed food made from seaweed. It has a smooth texture and is an important part of the Hakata breakfast. The flavor of the seaweed and our original dipping sauce are a perfect match.
An assortment of rice accompaniments
We offer a rich variety of dishes to accompany our fluffy Itoshima rice, including kelp mentaiko, crispy dried sardines with Japanese pepper, Saga beef with ginger and soy sauce, Hakata leaf mustard, salmon roe with Matsumae kelp, flaked salmon, pickled celery, and Ariake seaweed.
Hakata’s specialty: mizutaki broth and miso soup
Start your morning deliciously with mizutaki broth that is easy on the stomach following a day of enjoying Nakasu cuisine, nyumen (fine white noodles in a collagen-rich broth), or miso soup made with Itoshima miso, sake lees, and soy milk from Fukuoka.
Our menu also includes a wide selection of Western-style dishes. Choose from plain or mentaiko-topped focaccia freshly baked that morning, minestrone packed with vegetables, a hearty quiche, fresh vegetables, deli salads, and much more.
Assorted desserts
Handmade desserts using ingredients from all over Kyushu, such as Kyushu Macedonia salad, Itoshima’s Mataichi no Shio caramel chiffon, and Yame green tea jelly. Served with yogurt or fruits.
French toast
Homemade French toast made with our head chef’s original recipe, its crispy outside and soft inside give it the irresistibly melty texture of a crème brûlée.
We offer a selection of Kyushu and Hakata specialties, made using the freshest ingredients gathered at the market every morning. We strive to create original Japanese dishes with the essence of Western cuisine. All of our meals and desserts are always homemade.
